Emmer wheat is one of three varieties commonly described as farro. Of the three (einkorn, emmer and spelt) emmer has a medium sized berry while einkorn has a small and spelt has a large berry. This emmer wheat is pearled so it will not germinate and is usable only in cooking and baking applications.

Emmer does contain gluten. It can be gound for baking flour and can also be boiled where it is popular substitute for rice, millet or quinoa.
